Christmas food is not just about Turkey! And moreover as a nation many of us are becoming more conscious of our health and having a plant based diet. Christmas is therefore not an exception and a Vegan Christmas is now becoming popular. Fortunately there are now lots of Vegan Christmas Dinner Recipes to choose from. Consequently there are now shops that specialise in ingredients for vegan Xmas recipes.
A Vegan Christmas Dinner can still have all the trimmings of a meaty Christmas Dinner. Further the internet is awash with Vegan Xmas recipes. So we have picked a few of our favourite Vegan Christmas meals to tantalise your taste buds. These Vegan Xmas recipes are particularly popular with our Vegan clients and are really straight forward to make.
1. Vegan Christmas Dinner – Starter -Winter Squash Soup
This is one of the best Vegan Xmas recipes for a starter. It is a great winter warmer and perfect to batch up and freeze. And moreover it is the perfect starter to a Vegan Christmas dinner. Therefore served with a crusty bread it makes a great starter on a Cold Christmas day.
Ingredients
1 Butternut Squash, 1Kg Carrots, 500ml Vegetable Stock, Handful of Thyme finely chopped, 2 tsp Tumeric.
Add the coconut oil to the pan and heat.
Chop the onion & garlic finely and fry in the pan until softened.
Cut the Butternut squash into small pieces and dice the carrots. Add to the pan with the chopped thyme and mix together for a couple of minutes.
Add the turmeric.
Pour in the vegetable stock and bring to the boil.
Add a small amount of salt and pepper to season.
Turn the heat down and put the lid on the pan and leave to simmer for 30-40 minutes, checking to ensure it does not dry out. Add more stock if necessary.
Once the vegetables are softened use a hand blender to liquidise.
Serve or batch in containers to freeze.
2. Vegan Wellington
This is perfect for a vegan Christmas dinner. The great thing about this recipe is that you can add and take away from it depending on what your personal preference is. Consequently it is a great recipe for any time of the year and you can add some Christmas ingredients for a Vegan Christmas . So unlike it’s meat alternative this is one of the Vegan Christmas meals that is a lot easier and quicker to make.
Ingredients
2Tbsp Coconut Oil, 1 Onion finely chopped, 1 leek finely sliced, 200g grated beetroot, 200g grated carrot, 130g fresh Cranberries, 75g Walnuts chopped, 2 cloves of Garlic, 200g Chestnut Mushrooms chopped, 4 Portebello Mushrooms, 1 packet of Vegan Puff pastry.
Add the coconut oil to the pan and heat.
Toss in the sweet potato pieces and cook for 5 minutes until they start to soften.
Add the onion, leek, beetroot, and carrot to the pan and cook for 10 minutes.
Add the cranberries, walnuts and garlic and cook for a further 5 minutes
Take the mixture off the heat and put aside.
In the same pan add the chestnut mushrooms and fry for 5 minutes, then add these to the mixture.
Fry the Portobello mushrooms and fry on both sides
Now everything is cooked it is time to make up the Wellington.
Roll out the pastry into a rectangular shape and place the Portobello mushrooms along the middle. Add the mixture on top and fold the pastry over so it is tightly wrapped around the mixture.
Brush the pastry with some coconut Oil
Cook in the oven at 200c (180c fan) for about 20 minutes until the pastry is golden brown. Serve immediately.
3. Christmas Nut Roast
No Vegan Christmas dinner is complete without a nut roast. Similarly like the Wellington you can mix and match the ingredients to suit your own taste. As a result we have chosen one full of flavour for you to make. It is a simple case of mix ingredients – roast in the oven! Done!
Ingredients
2tbsp Coconut Oil, 1 Large Onion, 2 Cloves of Garlic, 200g of mushrooms chopped, 1 large carrot grated, 1 Courgette grated, 150g mixed nuts (choose your favourites) chopped, 2 Tbsp sunflower seeds, 100g Fresh breadcrumbs, Fresh Thyme finely chopped, Fresh Oregano finely chopped, 2 tsp Dried Sage, 1 tsp Tumeric, 1tsp Nutmeg
Preheat the oven to 200c (180c fan)
Grease a loaf tin (1.5l) with coconut oil
Put 2tbsp coconut oil in a pan and fry chopped onion until softened.
Add the mushrooms, carrots & courgettes, fry for a few minutes.
Put in the nuts, sunflower seeds, breadcrumbs, thyme, oregano, sage, turmeric and nutmeg. Season with Salt & pepper.
Pour the mixture to the loaf tin and bake in the oven for about 1 ½ hours until the nut roast is lightly browned.
4 Roasted Mushrooms and Vegetables
To complement your Vegan Xmas Dinner you need a selection of beautifully cooked vegetables. In the same vein like all our recipes showcased here it is about mixing and matching to suit what you love. And moreover do not be afraid of experimenting with new flavours and textures.
We recommend you have about 5 different types of vegetables roasted to complement your vegan Xmas food
When roasting vegetables you need to work out the timings when roasting vegetables together.
Harder vegetables take about 30 – 50 minutes depending on the size. These include Onions, Pumpkin and Potatoes. Chop them up and toss into a baking tray and drizzle with some oil and place in the oven at 200c (180c fan).
Softer vegetables include mushrooms, cauliflower and Brussels sprouts. These take about 10 – 20 minutes depending on the size so cook these second.
However as there are mushrooms in the other recipes you may want to replace these with say broccoli or peppers (unless of course you love mushrooms!!)
5. Vegan Christmas Dinner – dessert – Vegan Sticky Toffee Pudding
To complete your Vegan Xmas there is nothing better than a sticky toffee pudding vegan style. Who doesn’t love a sticky toffee pudding? At Chef in my Kitchen this has been voted as the ultimate out of all our Vegan Christmas meals. Try it and I am sure you will think the same.
Ingredients
200g dates, 100g Demerara Sugar, 120g Vegan Butter, 100ml Almond Milk, 100ml Oil, 1tsp Bicarbonate Soda, 1tsp Nutmeg, 1tsp Cinnamon, 175g Self Raising Flour, 150g coconut cream, 50g light brown sugar
Preheat the oven to 200c (180c fan)
In a bowl add 100ml of boiling water and add the dates
In another bowl cream the sugar and butter then add the milk and oil and stir in
Blend the dates to create a paste
Add the date paste to the sugar mixture and add the bicarbonate of soda, nutmeg, cinnamon and flour.
Put the mixture into a pudding bowl and place in the oven for about 45 minutes. Before you remove from the oven check the pudding with a skewer and make sure it comes out clean.
In a bowl combine the coconut cream and sugar and microwave for 7 minutes
Serve immediately.
